1. Tervis Tumblers
I got my first Tervis about seven years ago when I won it on a blog giveaway. The woman from my church that I won it from is now one of my closest friends, which is so fun to think about. But it started a lifelong love affair with TT. These cups are my favorite. They keep drinks cold (and hot, although I've never used mine for hot drinks) and they don't sweat! They're also basically indestructible. If they break, I'm pretty sure they'll replace the broken one for free; I think that happened to my sister-in-law! I know that the Yeti tumblers are all the rage these days, but no one can sway me from my beloved Tervises. I always get mine at Bed Bath and Beyond with a 20% off coupon, so they're practically free! (Haha, says my husband.) My friend, Amy, is always up for sending me a monogram for a blank Tervis like the one below. These are always great gifts; I like to give personalized TT's to Griffin's teachers at the end of the year! Sorry, spoiler alert if you ever teach my son. And so ends my ode to a CUP. I need to get a life.
2. Funny Bunny
I love to paint my nails and I can typically do a pretty good job thanks to a quick dry top coat (Seche Vite, get some at Target or Sally's! You won't be disappointed!) I've been on the hunt for a good white-ish neutral for awhile. When I had Samuel, my first night nurse came in to care for us and her polish was FABULOUS. It was exactly what I was looking for and I was almost as excited to find the perfect shade as I was to be holding my new baby. Thankfully, it's an OPI shade, because I'm done using anything but OPI. Everything else peels or chips off my nails within a day. She told me it's Funny Bunny and... I might've ordered some on Amazon during one of Samuel's first middle of the night feedings. Hey, a girl's gotta look good for her men! I've been so happy with Funny Bunny and I foresee having to buy another bottle soon since I'm almost out.
3. Samuel's Birth Story
This is kind of a cop-out #3 to show you this sweet big boy in his Bumbo, but I'm making myself sit down next week and blog his birth story. It was such a wonderful day and I don't want to forget a moment of it. And on that note, how is this baby, who was born YESTERDAY, already sitting up in his Bumbo!? I love this child so much. He's such a content little angel. And those eyes-- could you not just gobble him up?
4. God made dirt and dirt don't hurt
I waxed poetic about our backyard a few posts ago, but I couldn't love it more. It's flat, our kitchen looks out onto it and we have a door that opens right onto our patio. This week, Griffin realized we have a little shaded dirt patch at the top of a hill in the backyard. He collected all of his little diggers and bulldozers and has sat up there so much playing quietly over the past few days. Annabeth ventures up there a bit and surprisingly, he shares his vehicles quite well. I love seeing him use his imagination; right now, he's building a road and very proud of it! It's bought me a lot of peace and quiet lately and you can't put a price on that.
5. Sweet Corn and Tomato Pizza
I love summer food. LOVE it. I especially love a big old ear of sweet corn and a homegrown tomato with lots of salt and pepper. I got it into my head recently that I needed to have both of those things on a pizza together, so the other night, I whipped this up. I could've eaten the whole thing by myself!
Sweet Corn and Tomato Pizza
serves 4
Thin premade pizza crust (I got mine at Aldi!)
Pesto
Fresh mozzarella
Roasted tomatoes
Sweet corn
Red pepper flakes (optional)
Take two pints of cherry tomatoes (one yellow, one red), cut them in half, and toss them in olive oil, garlic salt, and pepper. Throw them on a foil lined baking sheet and roast for 20 minutes on 450.
Cook two large ears of sweet corn. You can either shuck it, then boil it or do what I did which was SO much easier. I microwave each ear of corn individually on high for 4 1/2 minutes in the husk. Upon removing it from the microwave (with an oven mitt-- it'll be hot!), I put it on a cutting board and cut the stalk end off with a large chef's knife. The corn will slide right out of the husk! I just cut it off the cob after that with the same knife. I used this YouTube video for reference.
Spread pesto on your pizza crust. Slice mozzarella to desired thinness and layer on your pesto. Spread your roasted tomatoes and sweet corn over the top of the mozzarella and then bake according to your crust recommendations. Mine baked directly on the oven rack for 7 minutes.
Sprinkle with red pepper flakes and serve! Or, if you're like me, grab the CHILI POWDER and don't check which spice you're using and dump it on half the pizza. Good Lord. I tried to get it all off and thought I'd eaten that portion of the pizza until Tyler asked what was in the pizza that was "making his lips tingle". I laughed SO HARD. Lesson learned-- check your spices, Haney.
